Because calls occupy a 'virtual channel' you don't need a pair of wires for every call. If you are using a regular phone this means you can place a call 'on hold' while talking to another person. If your phone is a more advanced VOIP phone with 'line' buttons, you can switch between many calls or enter a 3 party call.
If you want to talk to more than one caller at a time, you can use multiple phones.
